Cellar Classic Winery Series

	Rich expressions of personal flair showcase your wine cellar to the ultimate best with these richly structured red wines. Each kit contains 18 litres of varietal grape juice and concentrate plus 2 ½ kilograms of varietal grape skins, stems, and seeds to result in a wine of unsurpassed quality. While designed as a 6-week wine kit, at Wascana Wine & Brew we believe in giving these kits the extra attention they deserve by taking them to a full 8-week kit and suggest you do the same.
Australian Meritage
Classic Bordeaux varieties made with a new world twist! A full-bodied fruit forward flavourful blend that highlights all the characteristics of the noble grapes it contains. Cabernet Sauvignon brings dominant cassis flavours and firm tannins; the Merlot softens with hints of plum and violets, while the Cabernet Franc adds dark cherry notes. Toast and vanilla notes from the American oak will create a balanced classical wine. Left to mature, this wine becomes lusciously smooth and ultra delicious!

California Cabernet Sauvignon
WINNER BEST in SHOW KIT WINE, at the 2009 International Winemaker Competition. A distinctive Cabernet Sauvignon in an appealing complex rich style. This full bodied wine has a deep garnet colour with delicious aromas of plump blackberries, sweet vanilla and fresh violets. Notes of blackberry and cherry grace the palate, interwoven with rich tannins and pepper spice extracted from the Cabernet Sauvignon Winery Grape Skins.

California Old Vine Zinfandel
Sourced from old vines that date back to decades of history and traditions, our Old Vine Zinfandel surrounds the palate with impressions of black cherries and plum ripe fresh fruit, framed by ample aromas of tobacco and dark coffee from the toasted French oak. Fermented on varietal Zinfandel Winery Grape Skins, this full-bodied wine is fruit forward, yet showcases an array of spicy flavours on a smooth finish.

California Syrah
Bold and assertive, the bouquet is opulent with vibrant notes of black currants, rich leather and pepper spice laced with strong toasted oak. Fermentation on the Syrah Winery Grape Skins reveals bold overtones of dark chocolate, bursts of spice and an abundance of bold chewy tannins. The finish is seamless, adding depth and character to this masterpiece.

Chilean Malbec
Malbec, the fastest growing red wine varietal in Canada! Our newest addition to the Winery Series is rich and luxurious with a brilliant of dark fruits and subtle hints of oak. Strong plum and rich berry flavours are perfectly balanced by moderate tannins provided by the Malbec Winery grape skins.

French Grenache Syrah
Two of France's dominant grapes are gracefully blended together to create a wine that will soon become the pride of any winemaker's cellar! This is a bold wine with a nose brimming with spicy black pepper notes, dark fruit, earth and a hint of tobacco. Fermented on Syrah Winery Grape Skins and French oak, this wine is, in a word, impressive!

Italian Amarone
The pride of Veneto, Italy! Reminiscent of the romance Italy brings, this wine will be love at first sip. It is rich in both flavour and aromas. A spicy bouquet is complimented by big round flavourful fruit. Allow this wine to age minimally for 9 – 12 months then pour a glass, close your eyes and imagine you are basking in the sunshine on a terrace overlooking a Tuscan vineyard!

Italian Rosso Bravissimo
Italian tradition calls for cheering "Bravissimo" during standing ovations, a name appropriate for this wine! Fermented on Merlot Winery Grape Skins and Hungarian oak, this wine will develop into a complex, bold wine typical of the warm sunny Tuscan region. Cherry and plum notes are complimented with cassis and rich tannins lending to a graceful, lingering finish. This wine is sure to have you cheering Bravissimo after every sip.

Italian Super Tuscan
Full bodied and dry, this ultra Classic Italian blend exudes aromatics of farm fresh raspberries supported by subtle hints of vanilla and earthy tones. Fermentation on untoasted American Oak shavings adds intense tannins to round out the concentrated nose of blackberries and black pepper on the finish.

Italian Valpolicella
Elegance and style come together to build this wine of true character. It boasts a fruit forward nose distinguished by aromas of raisins, dark cherries and toasted oak. Drawing inspiration from the Primitivo Winery Grape Skins, it showcases firm tannins on the palate, embraced by concentrated notes of sweet chocolate and prunes. The finish is dramatic, peppered with layers of dark fruit and aggressive oak.
